Savour the Flavour Saviour!

Aging.  Good, bad, ugly.  I guess we need to embrace these so we can age gracefully (for the most part).   

Since 2017, I have had on-again off-again vertigo, combined with tinnitus, and some hearing loss.  Fast forward to 2021, my ENT has diagnosed me with Meniere's Disease.   It's not deadly, but during my vertigo episodes it is completely debilitating.  I have been doing a lot of reading and diligently taking my medications. I am also looking outside of the box for anything that will help manage these symptoms.  Some days I can hardly get out of bed, while other days I feel like I can "climb any mountain".  That is the nature of this particular beast - there is no cure and many things that work to manage it are anecdotal.

One of the things that does help me (and many others) is a low salt diet and drinking lots of water. Being the foodie that I am, this is devastating for me to have to control this, yet at the same time...challenge accepted.

My goal for sodium intake is to hover around 1500 - 2000 mg per day.   Did you know that 1 teaspoon of salt has 2400 mg of sodium?  YIKES!  My favourite Hawkins Cheezies?  Per individual serving has over 600 mg of sodium?  NOOOOOOOOOOOO!   Well, I can find a recipe for that (thank you Julie Van Rosendaal).

Oh yes, and cheese. That also has salt.  Well, fuck!  I will pick and choose carefully, and I won't be giving up cheese (or wine) anytime soon. 

So how do you flavour food without salt?  There are cookbooks and diets dedicated to low salt due to other health conditions.  What I am writing about is nothing earth shattering.

But, I am a foodie. I talk about food.  I cook. I  create. I indulge.

I love food. I am in love with food.  I have a healthy-ish relationship with food

This is my way. 

We can always cut down or eliminate salt from any recipe.  That part is easy.  Or we can enhance our meals with other brilliant options and Savour the Flavour Saviours! 


Citrus

Pick any citrus fruit and enhance the flavour.  I love making wings with lime and pepper, or with lemon and oregano for more of a Greek twist.  For wings, if you make them extra crispy in the oven, you can just squeeze a fresh lime or lemon over top before serving.  This works on ribs too. Try making a chimichurri style mixture and squeeze a lemon over the ribs as the come out of the oven.  Hear them sizzle!  Citrus also works well as a salad dressing with a bit of good quality olive oil.  My favourite salad these days is a combo of avocado, cilantro, blood orange, naval orange and lime juice.  Throw in some shrimp if you want a meal! Add chili flakes for heat! 

Sherene's Greek Ribs - low in salt and full of flavour
Mix together the following, all finely minced for about 3lb of ribs
Can be in a rack or half rack.  You can also cut them all before marinating and baking
Recipe doubles easily

1 TBSP dried basil
5 - 6 cloves of minced garlic
2 - 3 teaspoons of minced rosemary (fresh is awesome and dry also works)
2 teaspoons of dry mustard powder
1 teaspoon of salt (original recipe calls for 1 TBSP)
1 teaspoon of pepper

Mince altogether to create a yummy paste.  Taste to see if it is to your liking.  Coat ribs and slow cook covered with foil in oven for 3 hours on 325F.   You want them tender and not quite falling off the bone. If doing half racks, can quickly BBQ after they are cooked if you want that grilled flavour.  Once cooked, squeeze fresh lemon over top and enjoy!  



Herbs and Garlic

Is there anything better than the smell of fresh herbs and garlic?  Adding sage and garlic with brown butter to gnocchi is exceptionally delicious.  Note that for butter, I use salted and don't add extra salt to what I am cooking.  I have made this particular recipe for sweet potato gnocchi with ricotta cheese a few times.  Devine.

Fresh herbs and garlic can enhance anything.  Try adding fresh basil to a salad. Make your own homemade chimichurri with what ever herbs you have on hand by mincing them with garlic and olive oil. I will sometimes go on "herb patrol" in my fridge.  Anything that needs to be frozen will be blended with olive oil and a splash of red wine vinegar to make little ready-to-go seasoning cubes.

cilantro/parsley/garlic
oregano/basil/garlic
thyme/sage/rosemary/garlic
rosemary/basil/garlic

Create your own favorite combo!

Blend together with olive oil, a splash of red wine vinegar and freeze in an ice cube tray. Once frozen, pop out and store in a freezer-safe container and use as needed!



Oils

Oils are another great way to flavour foods.  A few years back,  I was grocery shopping and ran into a friend I used to work with.  She is the creator of this amazing Seven Spice, by far one of our family favourites.  We use it as a dip, dressing, spice...you name it.   It is amazing with pizza, wings, or as part of a marinade.  I also put this on top of salmon with some lemon slices and the flavour is fantastic!  Try a drizzle of maple syrup for that sweet / savoury combination. We have also  used Seven Spice to flavour Asian style soups, which seems to be that missing ingredient that we all wondered about. Delicious! 



Sesame oil or any infused oil adds a nice strong flavour and a little goes a long way.  Wonderful with tuna poke, salad dressings, soups and marinades.  I recently found a recipe for honey sesame chicken, and omitted the salt.  The honey glaze and sesame oil combination was amazing! I came up with my own version so it could be low in sodium. 



For the chicken:
Cubed chicken breast
cornstarch
black ground pepper
Mix together and sauté with sesame oil or any oil until fully cooked.




For the glaze:
1/3 cup honey
1 teaspoon apple cider vinegar
1 tablespoon of spicy tomato jam (see below!)
1 teaspoon of sesame oil
1 tablespoon of cornstarch
1/2 cup water
Mix all this together and bring to a gentle boil until it thickens.  Add cooked crispy chicken and serve with veggies and/or rice.



Savoury Spreads

Nothing says flavour like a savoury spread! These are two of my favourites  Don't let the name "Spicy Tomato" fool you.  It is incredibly versatile - great on a sandwich, burger, or as a charcuterie accompaniment. We used it in the above recipe for the honey glaze (the original recipe called for ketchup).  With zero sodium and zesty flavour, how can you go wrong?  




Coconut Aminos

Here is something I had never heard of before.  Coconut Aminos!  I was catching up with a friend and had told her about my low salt woes. She mentioned this product as it's a lower sodium option to soy sauce made from fermented coconut palm sap.  Is there anything that coconuts can't do??
It is soy-free and gluten-free if that's what you are looking for. While it still contains sodium, it has almost 50% less than the Kikkoman Less Sodium soy sauce.  Per teaspoon, the Coconut Aminos has 90 mg of sodium. The Kikkoman Less Sodium has about 193 mg of sodium per teaspoon.  It is not completely low, but a little goes a long way.  It has a great savoury taste with a hint of sweetness.  


The downside is that it is a bit pricy, but the cost of me enjoying my sushi.....priceless!



Liquid Smoke 

I have only used liquid smoke in one recipe so far, which is from another dear friend of mine.  It is simply the best three-ingredient recipe on the planet and has tons for leftovers.

This pork is freaking amazing. While the recipe does call for 1 tablespoon of Pink Himalayan Salt (approximately 5500 mg sodium), I recently did this pork with half of the sodium in a 5 pound pork shoulder, adding a bit more liquid smoke (zero sodium in this smoky stuff).  The taste was still incredible.  Worth the non-effort for this meal, as it works for leftovers in tacos, nachos and sandwiches.    
 


Vinegars


Vinegar - not just for cleaning anymore!  So much flavour can be found in a variety of vinegars and with zero sodium, so go wild! They are great with oils as a dip, in a salad dressing or marinade.  One of our favourite salad dressings is to just use the balsamic reduction drizzled over top. 

I recently enjoyed one of my fave pub food meals - fish and chips.   I did eat the batter on the fish (duh!) but got my fries with no salt (I don't like ketchup, so this is also a plus).  Dipping those fries into malt vinegar sent me back to my childhood in Halifax, eating fish and chips at Point Pleasant Park.  Fully enjoyed my pub meal without the salt.  It is important to be vigilant when ordering at a restaurant.  I am an expert at asking way too many questions about the foods on the menu, but worth the time and the extra malt on the side.



Alcohol

Never underestimate the power of alcohol.  Cooking with booze is not new and adds so much flavour!  Making a nice bourbon sauce for steak, or a white wine garlic sauce with lemon makes me go from zero to hero in the kitchen!   I have no specific recipes that I use, but adding wine to any dish usually pans out (plus I get a glass or two on the side before dinner, a win-win!).  A great way to enrich your dishes with lots of flavour.   Just don't skimp out.  Enhance your foods with wine that you will actually drink and don't go for the cheapo Naked Grape.  I am not saying to cook with a Barolo, but cooking with good wine will give you the best results, plus a delectable pre-dinner glass-o-vino while cooking!



Nutritional Yeast


Here's a nutty-cheesy-gooder!  Even my cheese-loathing child will put this on her popcorn.  Not only does this have only 25 mg of sodium per 1/4 cup but it comes with a nutritional punch, also having 8 grams of protein and 3 grams of fibre.  Plus it is loaded with B vitamins all well above 100%!  We have used this primarily on popcorn (yes with a bit of melted butter so it sticks), but it is simply delicious!  There is even a recipe on the back for a cheese sauce sans- fromage.  Adding this to dips and other sauces would probably work too (have not tried yet) to add extra flavour and bonus points for nutrition. 






Spices

Spices are another easy way to add a bit of zest and zing. Make sure you read the label, especially if you are buying a pre-made spice mix or a blend.  We tend to avoid the packages, and often will create our own mixture.  Either we put in a fraction of the salt, or hold the salt altogether.  There are lots of great recipes online for rubs and mixes, whether you are cooking Greek, Mexican, or fusion.   





Another spice that a friend introduced to me is Sumac. Made from the crushed berries of the Sumac flower, it has a lemony tangy taste, often used in Middle Eastern cooking. It is quite versatile - filled with flavor, this spice can be used in dry rubs for grilling meats or as mixed with olive oil to dress a salad.   Truly delicious!




Our favorite Spice Rub from "Gastro Grilling" by Ted Reader
1/2 cup paprika
1/4 cup chili powder
1 TBSP salt (original recipe calls for 3 TBSP)
2 TBSP ground coriander
2 TBSP garlic powder
2 TBSP white sugar
2 TBSP curry powder
2 TBSP hot mustard powder (we have omitted sometimes as we don't have it)
1 TBSP ground black pepper
1 TBSP dried basil
1 TBSP dried thyme
1 TBSP grond cumin
1 TBSP cayenne pepper (I use 1 teaspoon) 

Great on ribs, chicken, burgers, fish, vegetables, potatoes and more!  Next time I make this spice mix,  I plan to try it sans-sodium! 






Cooking with less salt and enhancing the flavour with other ingredients can take your creations to a new level.  One of my favourite cookbooks (yes I still have cookbooks!) is The Flavor Bible. Set up alphabetically, each food has a list a mile long on what flavours and spices go with any food.  Brilliant. 

There are so many ways to enliven our palate without (much) salt.  I refuse to let this dampen my sensory food experience. Flavour gives meaning and depth to the food we create. I encourage everyone to find inspiration and innovation when cooking and discover creative ways to add that extra zesty bite to everything you do!

Suddenly September...

September.
First, on Sunday, it was 25 degrees...did my perennial planting,
Got some great sun, had the neighbours over....good times....

While I love the fall, falling back into September pretty much sucks.  Gone are the whimsical days of summer, and we are forced back into a rigid routine, ditching our flip flops for proper shoe-ware, and telling ourselves that we need to cut back on all the wine and cheese we feasted on over the summer (nothing good can come of this!).  

...then...this happened the
NEXT day! Its still summer!!!!


Don't get me wrong, there are a lot of great things about September...the fall is beautiful (well, not today in Calgary), the kids are back in school, and while they don't realize it, they DO thrive on structure. 

But, before I become to bitter and numb to the pain of September, it would be good to reflect on the wonderful summer we had, from east to west!    We did two weeks in Ontario for my cousins wedding,  with a side trip to Montreal (yes, got bagels AND 4 lb of smoked meat!).   What a great wedding (with a fab and sexy MC...me!), and just some much needed connection with my entire family.  Then we did two weeks out west and drove to Victoria, stayed with my hubby's bro and his wonderful family. On our way back we stopped for our annual week at Mara Lake, which was fantastic, as usual!

Be One with the Food....

Yoga:   physical, mental and spiritual practices to attain a state of permanent peace of mind in order to experience one's true self.

I started blogging a couple years ago due to a yoga-related mishap.   Even though I am not a "bendy and flexy" person, when I do go to the occasional yoga class, I am able to breath and find some moments of inner peace.  But I have found one form of yoga I could truly master...Food Yoga.  Even just saying the term "food yoga" makes me think of food on so many different levels.   I used this term recently with a client while describing the art of mindful eating.  What would my definition of food yoga be?

Food Yoga:  To practice healthy, wholesome and soulful eating while being mindful of both your inner and outer surroundings.

Think for a minute about our inner surroundings.  Eating is an incredibly complex process that we often take for granted.  It involves all five of our senses, all twelve of our cranial nerves, facial muscles, a complex swallowing mechanism so we don't choke on our food...and that all happens before the food even reaches the stomach!

Now think about our outer surroundings.What does the food look like?  Sound like?  Smell like?  Can you see the different colours on your plate?  Can you hear the crackle of  breaking bread?  The sizzle of steak on the BBQ?  Smell the wonderful aroma....take it in before really taking it in.  We have all or our senses activated before we even manage to actually eat what is in front of us.

We take all of these food-steps for granted when we rush or eat mindlessly.  We may not even notice other aspects of our surroundings...the ambiance, the company we keep, the conversations we may miss due to rushing.  I am not saying we always have to be aware of every step, but practicing food yoga can help strengthen our relationship with food.  Ultimately, food yoga can enable us be mindful of what we are doing and focus on the enjoyment of eating and the afterglow of a good meal instead of rushing to the finish line.  What's that saying...it's not the destination, but the journey?

I know you may be thinking..."it's just food...what is she going on (and on) about?" but eating is something we do on a daily basis.  While we may not have time to practice food yoga everyday, maybe we should try sometimes to just take a moment during a meal....stop....close our eyes...and just.... breathe.

I know it is processed, but I need a BREAK!

Ok...so it is October.  We are almost 2 months into school, and I am already at the point where school lunches are giving me ulcers and acne.  Seriously!  My kids will prepare their own lunches sometimes, but there are days where there just isn't time.  Between a busy hockey and ringette schedule and the fact that the kids are getting later ice times and more homework due to their age, it just seems busy beyond belief.  

Today, I treated myself...no, not to a mani-pedi, not to a day at the spa...but to some convenient, semi healthy choices from Costco.  I truly believe that all foods can fit...everything from home-made to processed....it's really just how they fit into your life that makes the difference.  Of course it is better to prepare things from scratch, but at the same time, it can be emotionally healthier to give yourself a break and go with food that is easy and prepared.  And to NOT feel guilty about it!  So, today I bought 1 package of beef sausage rolls, and package of mini soft chicken taco's.  When I was loading up my cart with the lunch items, as well as a Costco fresh-made lasagne for dinner tonite, I did feel slightly guilty, and even ashamed of my cart, which is utterly ridiculous!  I even tried to justify my choices to the cashier to try and find some sort of affirmation! Ridiculous!  Don't worry....I got over that by the time I got to my car.

The end result today was a delicious, easy dinner (with leftovers), and no-think lunches that I know the kids will eat.  Kids were happy, hubby was happy....and all the guilt was gone.  I even had time to make the garlic bread!

Happy Hallowe'en!

I have never LOVED Hallowe'en.  I like it, but I don't love it.  Growing up in Nova Scotia, it was always cold and damp, and any costume you wore had to be modified with some sort of raincoat and rubber boots, or a winter jacket and mitts.   Calgary is no different, though the last 5 years here have been so mild that tonight's "freezing" weather threw me for a loop.  But...it's all about the kids, and they had a blast tonight.

For the first time since we have been taking them Trick or Treating, tonight was the first night that they went on their own, with friends.   At first, I thought I would be sad (no, I didn't!).   I came home after dropping my daughter at her friends and it was just my husband and I.  A strange feeling at first on  Hallowe'en, but then, we opened some wine, made a fancy cheese and olive plate, and I was no longer feeling nostalgic...but feeling proud that my kids had friends to be with, and proud that they were out on their own, having fun.  

All in all, it was a Happy Hallwe'en for everyone...kids AND parents!

Tell me why (I don't like Mondays...)

Like the song says....I don't like Mondays.   Particularly today!

I work part time, and Monday is MY day at home....so no, not sitting eating bon-bons watching soaps, but my day to do some cleaning, meal planning, going through last weeks mail, organizing etc...But today, many little things have happened already, and it's only 9 am.


  • Our son has a bad cold and cough today, so he is at home in the hopes that we will nip this in the bud.  While I am all for taking care of my kids, it changes my plans for MY Monday.  Selfish of me?  A bit.  
  • My weigh in the morning was NOT good (could it be all the wine I drank over the past two weekends?)  While I am not surprised at this more-than-2 lb-less-than-5 lb-gain, I am pissed off at myself for letting it go...again.   Back on the horse for me.  blah.
  • My daughter just called from the school, and forgot her agenda.   My response for this was to just write down her homework on a piece of paper, but no!  That wouldn't do, as she stated "mom, i really need the agenda because I have to pass in my Entertainment Book money and the field trip forms!".  Well, okay honey, I'll get right to it!  Then I thought in my head that if she had packed her bag last night, as I had asked, we wouldn't be here, now would we????

I saw a magnet on my mother-in-law's fridge this weekend, and it is very fitting for today.  It reads something like:
"Hold on, and let ME drop everything so I can work on YOUR problem" 
or something like that.    

Yep.  That's about the size of it.  But I suppose when you look at my list of Monday complaints, it is all minor stuff that is fixable and solvable, and I guess if you're going to have problems, it's best to have these types of problems (except the weight thing, which really REALLY sucks!).

An Unexpected (and awesome!) Surprise

My week that started out with me feeling a bit down about things, ended with our family having the best August long-weekend ever!   It began with my mom and sister visiting all of my family in Toronto...my gramma, and all the aunts, uncles, cousins, babies, etc...   Its always a great time, and I try my best to bring the kids and visit there every summer, but it often works out to every other summer, whether its due to finances, or other vacation plans.

The thing was that I REALLY wanted to be in Toronto with everyone.  I was obsessed with checking flights on Expedia, Westjet, Travel Buddy, Flight Finder....you name it, I checked it. All flights round trip were at least 800 plus dollars!  It took some time, (and the shedding of many tears) for me to realize that I just couldn't do it this time.   My husband was very supportive, and God lov 'im for putting up with my moods this week!  I had to figure out on my own that it was okay that I couldn't go, but it was okay to miss my family, without the mood swings.

Then, out of the blue, we got a phone call from my hubby's bro and his family.  They were driving back from a camping trip and had tried to get into one more camp ground on their way home, and couldn't get a site.  They called us to see if "there was room at the inn" and it ended up being three nights of full-on-family-fun-time!  And I can honestly say, it was what I needed.  I was no longer sad that I couldn't go to Toronto, but happy that I could "wine and dine" some of our family here (and you know how I thrive and flourish with feeding lotsa people!!!).   And wine and dine we did!   I think it was a non-stop eating and drinking fest!  We sat out on our deck, talked, had some fun drinks and delicious food, went to Calaway Park, played poker, played some other old-time family favourite card games and we even had time for a bit of "Fifty Shades"!  We had a handful of the cousins together (love that cousin bonding time!), and the adults (that would be the 4 of us, plus a few of the cousins have now "graduated" into adulthood) had a great time catching up and just visiting for no other reason than to visit.

The best saying of the weekend was near the end...right after I asked if anyone they wanted more food.   The response was a firm NO, followed by,   "I'll just wither away to my ideal weight!"  Classic, right?  Wish I could take cred for it!  That really needs to go on a Weight Watchers T-shirt or something!!

What a wild weekend, that started with a change of plans, and ended with  full tummies, our livers on overload to detox the system, but most of all ended with us reconnecting with family before the fall hits us hard with school and all the extra activities.

Top Ten Stampede Moments

The Calgary Herald published their list "100 Unforgettable Stampede Moments".   The list was pretty impressive, and I enjoyed reading that in paper this morning.  Considering I only went for 1 day, I thought I could write my top 10 moments.  And it goes without saying that the best thing was spending time with the family, so that's not part of my top 10!

10.  No line up for admission when we went!   This made number 64 in the Calgary Herald.  We went on Friday July 13th in the early afternoon and it was a fantastic time of day to go.

9. Found just about all of my Stampede Foods (these have also individually made it into my top 10).  Was sad that I did not find my jalapeno corn dog....next year, I guess!

8. Fantastic weather!  This actually made the Herald list at number 55.  The day we went was not too hot, not too cold...just right!

7.  Free Parking for us!   We decided to drive to the grounds instead of taking the LRT.  The first lot we tried, the dude there told us it would be 40 bucks to park there!  We promptly said "no thanks" (what a rip off!) and found a pay-lot a bit further away.   While we were pulling in, an kind woman offered us her ticket that was paid for until 7pm!  Thanks for that!   I have done this before as well with these types of pay-parking lots...pay it forward, and it'll all work out!

6.  Lemon Heaven Stands everywhere.  Our family loves the Lemonade from Lemon Heaven!   I tried the original lemonade with Splenda this time (their "Diabetic Lemonade") and it was delicious!

5.  Swing Up trampoline show at the Bell Stage!  This made the Herald at number 93, and we stumbled upon it...right place, right time and what a phenomenal show!

4. Deep fried Wisconsin Cheese with Jalapeno Ranch Dip.  My only mistake was not getting the combo plate.  We got the jalapeno cheddar....and yes, sinful, and no, not healthy, but sooooo goooood.......



3.  I won a prize!  I played the game where they had to guess my age (yeah, didn't go with the weight-one!) but the guy guessed 36!   I am well over that, so was happy with my Reggae Banana Stuffed Dude prize.

2.  Beef Brisket Poutine, Deep Fried Pickles, Pulled Pork on a Bun, Pulled Pork Parfait, etc...  Deep Fried Pickles made the Herald today at number 44, but Stampede goers need to make sure they are getting the BEST and ORIGINAL deep fried pickles with horsey-mayo from....my number one favorite place......

1.  BIG T's SOUTHERN BBQ!!!!!!!   Our friend's restaurant rocked the Stampede this year....they worked incredibly hard in incredible heat.  Their line ups may have been long, but they were so quick to distribute their food (probably one of the fastest at Stampede) nobody was hungry for very long!  Thanks Big T's!
